- 1 large egg
- 1 cup of milk
- 1 ½ cups of flour
- 1 tbsp. baking powder
- 2 cups of Hans Dairy Rice Pudding
- ¼ cup melted butter
- Pinch of salt
In a medium bowl mix together rice pudding, eggs & milk. Set aside. In a separate bowl combine flour, baking powder and salt. Fold dry ingredients into the wet mixture and then add in melted butter.
Heat a large skillet over medium-high heat with a little butter. Pour ¼ cup of batter into hot skillet. Allow to cook until bubbles begin to form on the surface of the pancake. Flip and allow to cook for an additional 2-3 minutes, or until golden brown. Serve with your favourite jam or berry topping.
